Delmar Introduces Kitchen Pro: Guide to Cheese Identification, Classification, and Utilization from The Culinary Institute of Am

Clifton Park, N.Y. — April 8, 2010 — Delmar, part of Cengage Learning and a leading provider of learning solutions for ongoing career development and education, announces the publication of Guide to Cheese Identification, Classification, and Utilization (ISBN-13: 978-1-4354-0117-4, $48.99), a comprehensive guide to cheeses from around the world.

Written by John W. Fischer, this book is part of the successful Kitchen Pro Series focusing on kitchen preparation skills from The Culinary Institute of America (CIA), the world’s premier culinary college, based in Hyde Park, N.Y.

Cheese is a definitive manual to purchasing and utilizing cheese for professional chefs, foodservice personnel, culinary students, and food enthusiasts. This user-friendly, full-color resource discusses the history of cow-, sheep-, goat- and buffalo-milk cheeses and their incorporation into different cuisines across the dining spectrum. Product identification by category, availability, storage, flavor profiles, and service styles are all described in detail in this invaluable introduction to the broad spectrum of cheese.

“A recent survey from the National Restaurant Association indicated that nearly two-thirds of chefs (63%) identified artisanal cheese as a ‘hot’ menu trend in 2010, rating it 26 out of 214 food and beverage items,” said Mark Erickson, VP and Dean of Culinary Education, The Culinary Institute of America. “With increasing awareness and popularity of fine cheeses, there was a clear market need for easy-to-understand information that is now provided through the latest addition to the Kitchen Pro Series, Guide to Cheese Identification, Classification, and Utilization.”

Exquisite photography accompanies a host of classic and on-trend recipes that demonstrate cooking applications using cheeses from around the globe – from house-made ricotta to macaroni and cheddar cheese with bacon, and from a leek tart with Ossau Iraty from the French Pyrénées to East Indian paratha stuffed with cottage-cheese-like paneer.

For culinary instructors, each subject component in the Kitchen Pro Series is accompanied by an Instructor’s Manual, a valuable resource that provides review and test questions, a course outline, teaching tips and guidelines, objectives, and key terms. The Kitchen Pro Series is comprised of six components, the final of which will release later this year. For more information, visit
