About the Author
John Fischer is an associate professor in Hospitality and Service Management at the CIA and serves as  maître d’ instructor in the college’s award-winning Escoffier Restaurant. A 1988 CIA graduate, he completed his externship field experience at Le Bernardin in New York City. Prior to returning to his alma mater as a faculty member in 2000, Fischer held managerial positions at several renowned New York restaurants. He is the author of two previous books, one of which focuses on professional dining-room service.
